Pasta and Broccoli Italiano’ MANGIA! MANGIA!

Heres one of Mama’s recipes that was quick and very simple to make.2 cups of pasta (substitute for wheat) I like to use bow tie’ pasta>rigatoni works as well<, 2 cups of broccoli florets,4 tablespoons of minced garlic(love garlic) it’s good for your blood!crushed red pepper to taste,fresh parmesan cheese and Italian extra virgin olive oil.Boil water for pasta and in a basket place broccoli florets,steam for about 4-5 minutes in a sauce pan of 2 inches of water on medium heat,than pull from basket and let cool,In a medium size skillet add 4 tablespoons of Italian extra virgin olive oil,place on medium heat add minced garlic and slighty brown,try not to over cook garlic,reduce heat once it’s done.Place bow tie’ pasta into boiling water and cook until tender,drain pasta and add to skillet,mix pasta,Italian virgin olive oil,garlic,while adding broccoli florets,crushed red pepper to taste and top with fresh parmesan cheese. That’s it! serve in a nice size bowl and enjoy.Dessert later Blackberry frozen yogurt.Bon appetit 🙂 Mangia! Mangia! P.S.  you can also use a 12 oz can of Campbell’s Cream of Broccoli’ as a alfredo sauce which taste AWESOME as well! Please for the love of God’ don’t use that store-bought crap alfredo sauce,as it is the worst thing out there for your Heart and very high in cholesterol!Campbell’s Cream of Broccoli’ much better for you.

Smoked Tri tip/Homemade Salsa

Hers’s another great summer treat taken from my recipe folder.Pickout a nice Tri tip,about 3.5 to 4.5 pounder and saturate it in a dark beer(2-12 oz)/while turning meat every other day for about 6-7 days in the fridge.Todays Tri tip has been well saturated for 6 days as today is the day we start-up the smoker.I like to place some well saturated hickory chips into my smoker,this will give an awesome smell,taste to the choice meat.While we wait for the chips to get hot/smoker should be around  225-250 degrees, grab the Tri tip and with your paring knife make deep enough cuts into the meat so you can input fresh garlic pieces,about 10-15 cuts/1 clove of garlic/seperated pieces cut in half should do.I like lots of garlic and this just adds to the taste as well.With this dark beer saturated meat and placed garlic throughout the Tri tip,gently rub-Giggity- your favorite herbs onto meat-Giggity.I use a combo of season salts and dry rub(meat) mixed in with black pepper.Thats it! Once your hickory chips/smoker are ready place meat down on FAT side,place FRESH ROSEMARY on to meat,close smoker top and walk away.I have seen so many people who keep turning the meat over and over every 15-20 minutes-WRONG-the best way to cook Tri tip in a smoker is to place it down FAT side and let it cook solid for about 2 hours,depending of size.Today it’s a 4.5 pounder,left-overs,AVERAGE time you cook the meat, 20 minutes for EVERY pound.I like the meat a little tender and on the rare side so I’ll let it go for 3 hours,the Fat will start to char and sizzle,this a good sign.You want to check meat every hour and pour beer marinade over meat to keep moist-Giggity .Once you have checked meat at the 3 hour mark and it works for you,either buy cutting into or bounce the fork on top of meat it should stop feeling like jelly,turn meat over cook for another 15 minutes,pull from grill,place into a deep pan and cover with tin foil for 15 minutes,this allows meat to continue to cook.Next grab your large B-B -Que fork and steak knife, slice about 1/4 size and serve.If the meat is to rare for you,throw sliced portions onto smoker grill for about 6-8 minutes. Today I’ll be eating this Tri tip with store-bought potato salad from the deli counter,it’s made fresh daily and cheaper than making my own,also will serve up some deli counter baked beans as there’s is made with chopped bacon and taste so good, sliced oranges rounds out this awesome meal today,add in some of my homemade Salsa.A must with any Tri tip is a good homemade Salsa,forget that store bought crap,make your own,you’ll see that it beats any store brand,any day of the week!doesn’t take that much time to make and you can add whatever you what to make your own Salsa-OWN IT!My Salsa recipe can be found in previous past posts. Later Dessert frozen Blackberry yogurt.Enjoy,bon appetit 🙂

Smoked Lemon/Lime Chicken It’s 420 somewhere!

Well it looks like summer is here,for at least this week.Baseball in the air,with so much going down,Awesome time to be in Az and a great time to bring out the B-B -Ques/ Smoker’s- Smoke em if you got em’Giggity Giggity,Did you think I wouldn’t!It’s 420 somewhere!This recipe was one of my favorites as well while living in Cali,where Bar-B-Ques/Smokers are second nature.Today  it’s the Smoker 420.You will need 1 pound of a whole chicken/cut up into sections,or what I do is cut the bird right in half,wash and freeze one half as I prep the other half.Lets make the marinade,first grab a bowl add 4 cups of Lemon/Lime Tequila mix,1 tablespoon of garlic powder,1 tablespoon of onion powder,1 tablespoon of Cayenne pepper,and lemon pepper>off to the side for now.If you don’t have a large enough seal-a bag for the Chicken,than use a container with a lid,one large enough to submerge bird into marinade and place into the fridge for at least 6 hours or overnight till ready.Once your ready get the Smoker  set with presoaked hickory woodchips>couple hours or overnight.Place Chicken on grill,sprinkle with Lemon pepper and gently brush with olive oil every 45 minutes to keep bird moist-Giggity, keep covered and cook for 4-5 hours,with Temp Gage place into the breast of the Chicken and it should read at least 180 degrees,NO GAGE,than slice into breast.That’s it! serve with baked beans-Giggity and sliced Oranges, as they are plentiful out here and taste Damn good with Smoked /B-B-Que Chicken/baked beans don’t forget the homemade Salsa picante’>3 medium tomatoes chopped,1 medium sweet onion chopped,1 finely chopped Habanero and chopped cliantro,mixed in a bowl and squeeze lime juice to taste<O La Picante’ salsa>Served with a large Cherry Pepsi little ice.Enjoy,dessert later Blackberry frozen yogurt.Bon appetit 🙂

Potatoes and Sausage in a Crockpot

Today is a great day for some homemade comfort food,on this cold and chilly day. This recipe is very simple and easy to make.I got this recipe from the Galloping Gourmet!remember him!Graham Kerr!WINE IS YOUR CHOICE-Giggity Giggity.No Wine today.You will need a Crockpot,3 pounds of red potatoes,2 pounds of Italian sausage,1 Habanero,1 medium sweet onion,8 oz of cream cheese,1>10.5 oz can of celery soup and 1 oz of dry ranch dressing mix>package< This recipe takes about 5 minutes from prep to Crockpot.First a small amount of Italian virgin oil to coat the bottom of the Crockpot,next wash the red potatoes and cut into quarter size,I keep the skins on,your choice>throw into pot,next cut Italian sausage into 1/4 pieces,throw into pot,finely chopped Habanero,throw into pot and chopped sweet onion,throw into pot.Thats It! Now in a small bowl mix soften cream cheese,can of celery soup and dry ranch dressing  all together,than pour over  Potatoes and Sausage,cover,set on low for 6-8 hours>stirring occasionally.My Bro’s laughed at me for watching that cooking show,but soon were praising yet another meal well done,as this warm our bodies,after spending a rainy day on the beach.I hope you enjoy this comfort meal on a chilly day,as much as I do.Dessert later frozen Blackberry yogurt,bon appetit 🙂

Spicy Cheesy Turkey Enchiladas! MUY BUENO!

This is my recipe,that I was able to teach to my Mother.I had used this style from those days of living out with my Bro’s,during the early/mid 70’s while living down at the beach and paddling out all day,looking for that comfort,awesome  food that would make you sleepy after an energized day at the beach.Also made this a couple of times for my Girls when they were younger,theres were always just Cheese and lots of Sour Cream.How cute! until the divorce,not sure if they ever had this dish again 😦 I know their Grandfather on their Mothers side was a pretty good cook,his speciality was shredded Beef Tacos .With so many recipes out there,I simply adapted my own thoughts while thinking outside the box,but inside the kitchen-Giggity Giggity 420.You will need 1> 32 oz can of Enchilada sauce,3 different styles of cheeses shredded/mixed in a bowl.I use 6 oz of Sharp Cheddar,Monterey Jack,and Pepper Jack> 18 oz total,2 pounds of Beef, Chicken,Turkey or just Cheese.Tonight it’s Turkey!Muy Bueno!2 Jalapeno’s,2 Habanero’s,1 bunch of Cilantro,1 medium Sweet Onion,1> 8 oz can of chopped olives,homemade Salsa,Sour Cream,and 1 dozen flour tortillas.First brown the Turkey,drain grease add 2 heaping tablespoons of minced garlic,finely chopped Habanero,finely chopped Jalapeno,chopped Sweet Onion and a little Enchilada sauce for flavor,stir.I don’t use that store-bought packaged seasoning>it’s bad for you and you don’t need it.Grab tortillas,microwave for about 20 seconds? this makes them easier to roll when there warm,you can also use another skillet to get them warm>microwave is a lot easier.1 Tortilla at a time fill with meat mixture,sprinkle finely chopped Cilantro over each mixture with a little cheese rolling it like a burrito ,leaving the ends opened.Place into a 10 x 20 Pyrex pan,add remaining Enchilada sauce to the pan,covering all tortillas,add the rest of the cheese mixture to the top of the pan.Preheat oven to 350 degrees,cover with tin foil and bake-Giggity Giggity for 40 minutes.Thats it,pull from oven,uncover and with your kitchen shears,cut the washed green onions and place over Enchilada’s,top with Olives/Sour Cream,and Salsa. Serve with spanish rice/ refried beans>These side dishes can be easily made before hand.Steamed rice add 1 can of El Pato with cut Green Onions/refried Beans takes a little longer,so just store-bought will do,if you don’t have the time.Enjoy,dessert later as norm! frozen Blackberry yogurt.Bon appetit 🙂

Spicy Mussels and Linguine …Italiano!

Another of Mama’s recipe’s that is so easy to make,you’ll wonder why you don’t make it more often.I kick it up a notch by adding the Habanero,Mama would use crush red pepper.You will need 8 oz of linguine,2 teaspoons of Italian virgin oil,1/3 cup chopped shallots>2 large< I love lots of garlic,so 2 heaping tablespoons of minced garlic,2 cans of diced tomatoes>2/14oz< 1 finely chopped  Habanero or crush red peper, 2 pounds of Mussels,scrubbed and debearded>30<,and 1/4 cup chopped basil.First in a separate pot boil water on medium high,add Italian virgin oil so the linguine doesn’t stick.Grab your dutch oven,place on medium heat,add shallots and minced garlic,cook covered about 5 minutes,stirring occasionally,add diced tomatoes and Habanero or red crushed pepper,reduce heat,simmer,uncovered for 5 minutes.Stir in Mussels,cover and simmer about 10 minutes or until shells open,let  Mussels simmer over heat,discard unopened shells.Add linguine to boiled water for about 10-12 minutes,strain pasta,add to large dinner bowl,top with marinara sauce with Mussels and add  fresh basil.A great comfort food that taste Damn good!Mama would make this for special occasions,birthdays and holidays.You will make this a lot more often,as it’s so simple and enjoyable.MANGIA! New England Clam/Crab Chowder

This recipe is one of mine.I took the New England style and added crab to  make it a great comfort food dish on a cold day.You will need 4-5 pieces of bacon cut up into small bits.Next 1 medium sweet onion,2- 5 oz cans of clams>reserve juice< 1/2 -1  pound of crab,6-7 potatoes>cubed< 2-10.5 cans of cream of celery soup,1 cup of heavy cream,1 cup of milk,1 tablespoon of butter,and 1 teaspoon of dried dill weed.This soup will warm your bones on a cold rainy day,if your counting calories than lets cheat for one day.In a deep pot,cook bacon untill crispy>drain grease or not<add potatoes let them cook for 15-20 minutes, stir occasionally so potatoes don’t stick,add clams,crab,soup,cream,milk,and dill weed>stir together< add butter,and let melt into chowder.Cook until thickened>30-45 minutes< serve in bowl bread or a deep bowl.As I mentioned earlier this dish isn’t for the ones that are watching your weight,as it adds warmth to the body-go ahead,I won’t tell cheat for one day,while enjoying this hearty meal!You can buy this meal store bought off the shelf,and just add the crab,but it’s not the same,as it will enhance your home with a awesome smell while it simmers throughout.Besides do what I do,make extra,freeze for another day.  Dessert later of course,frozen Blackberry yogurt.Enjoy bon appetit 🙂
