This is about 15 minutes prep time and will make about 7 cups,just multiply as need.So if you needed 28 cups for a large party that would be 4 times the ingridents used here.Lets first grab what we need.4 egg yolks/1/3 cup of sugar,1 tablespoon/1 pint whole milk/1 cup heavy cream/3 oz of Bourbon/1 teaspoon of freshly grated nutmeg/4 white yolks.Grab your stand mixer bowl.Beat the egg yolks till there lighten in color,slowly add the 1/3 cup of sugar until it is completely dissolved.Add the Milk,Cream,Bourbon and nutmeg and stir to combine,pour into a seperate bowl.Next.Place the egg whites into the clean/washed out stand mixer bowl and beat to soft peaks.With the mixer still running add the 1 tablespoon of sugar until stiff peaks form.Whisk the egg whites into the first mixture.Chill and serve.Happy Holidays Bon Appetit

Palm sunday,so let’s do Spicy fish tacos.Orange roughy makes the best fish tacos,great taste.I’ll use for myself about 1 1/2 pounds!I’m using flour tortillas so lets them wait for now.You will need 1 whole medium to large purple cabbage/washed…shredded,place into bowl.Next two large tomatoes/washed..chopped,placed into another bowl.One large sweet onion peeled..chopped and placed into separate bowl.One bunch of cilantro/washed..paper towel dry by rolling cilantro,this will absorb the water/finely chopped and placed into small bowl.One large Habanero(wear gloves) finely chopped,placed on a small dish .Cover all ingredients with a moist paper towel..except Habanero and onions,place into fridge until ready to use.Preheat oven to 325!On a lightly oiled cooking sheet place fish down,top with lemon pepper and cook for twenty minutes.Pull fish from oven,place onto large dish,chop while adding the Habenaro.Lets eat!Grab a tortilla fill with Spicy fish.. add onion,shredded cabbage,tomatoes and top with cilantro and squeezed lime juice.Enjoy,bon appetit! While sitting in Church this morning,my thought for dinner tonight was a light,but tasteful dish. Today’s treat! Pasta with fresh chopped tomatoes.Hmmm,one of Mama’s recipes that took less than the time it takes to boil water and cook the pasta.In a large pasta pot(8 quart) or larger fill with water about 3/4’s of the way and place on medium/high,add a little Italian virgin oil to water(this helps pasta from sticking),cover.While the water is boiling about 10 minutes or so,grab a large size skillet and place on medium heat.Grab tomatoes!I use Roma tomatoes for this dish,as taught from Mama.. these are the best tomatoes for cooking as a sauce.Wash and rinse the tomatoes than chop into 1/8 to 1/4 size.In the hot skillet pour enough Italian virgin oil to cover skillet add two heaping size spoonfuls of minced garlic,Mama used lots of garlic, as she would tell me it’s good for your blood and (will kill all worms in your body)with a smile is what Mama would say!Don’t cook the garlic to long,just enough to give the garlic color,add Pasta to boiling water,remember your choice..I cook my pasta Ma Assolutamente Al Dente’..To the bite)..not over cooked or undercooked than add tomatoes to hot skillet and mix all together,tomatoes will breakdown…turn heat to low and cover.When pasta is done,drain and place into bowl.Grab tomatoes and pour over pasta dish,sprinkle a little Italian virgin oil(if desired) top with fresh basil/fresh parmesan cheese and serve…pass the Cherry Pepsi please and enjoy!Dessert later frozen Blackberry yogurt.Bon appetit 🙂
It’s Springtime/Summertime… time for Spicy salsa!I use the # 10 can of diced tomatoes with chiles,it’s easy and when your making a large amount a lot simpler.You can get this product at Costco’s or Smart and Final grocery stores.Pour the open can into a large bowl.Next you will need 5 Jalapeno,5 Habanero,5 Cali peppers and 5 medium sweet onions.You must wear gloves when dicing the peppers and onions,add all to the bowl and stir.Next lets add 1-16 oz can of pitted black olives,chopped and thrown into bowl.Next 5 heaping tablespoons of minced garlic,also 1 large cucumber, chopped…along with 1-16 oz can of pineapple drained and chopped.Mix into bowl with other ingredients.Salt to taste!Grab 1 bunch of cilantro,finely diced,add to bowl and mix with 2 medium limes squeezed over all.Now lets get my secret ingredient Shhh 1- 12 oz bag of shelled sunflower seeds,mix.Thats it! I’ll make this throughout the summer,maybe 5 times..this a great way to lose weight,while enjoying a tasty treat as a snack or in-between meals with chips or celery.I will use this on my Tritip dishes,fish dishes,shredded beef tacos and all spanish dishes…it also taste good on cottage cheese!Triscuits/Ritz crackers,almost anything you can’t go wrong.If the salsa is to HOT,you can cool it down with a sharp cheddar cheese mix into the salsa or a side of sour cream.Remember if any thing is to HOT,never ask for water.Water enhances the fire in your mouth from the peppers,best solution is always diary products.Milk is the best.I saw this one guy throw a glass of milk on his face because of the burning sensation on skin/face..IT WORKS! But tough it out,don’t wimp out..It’s Summertime,Spicy salsa time! MUY BUENO..bon appetit,now grab me my Cherry Pepsi,wimpy! Today it’s another favorite from the past.Steelhead Trout which I like over regular Salmon,cleaner taste-just ask your local meat counter person and they can order it for you,Albertsons here in Az orders it when they can.My dinner is cooking as I type,it just felt like a good day for some Steelhead-Giggity!First pre-heat your oven to 325 degrees.Now lets make the salsa.I use four medium size tomatoes..chopped and place into bowl.1 medium size sweet onion..chopped and placed into bowl.1 habanero finely diced(wear gloves) place into bowl..1 jalapeno finely diced and placed into bowl.Fresh minced garlic,about a large heaping spoonful and fresh cilantro finely chopped and placed into bowl,chop about 1/2 cup of pineapple…sprinkle lime juice over and mix together/chill in fridge.Next grab your cooking pan and lightly oil bottom,than place Steelhead trout,skin down unto pan,sprinkle lime juice over trout with lemon pepper and place in oven for twenty minutes.While the Trout is cooking grab veggies-broccoli tips,cauliflower and baby carrots…wash and place into basket over pot filled with water.. enough water to hit just below basket.I like my veggies Al Dente’..To the bite’ place all veggies into basket and let them steam for the rest of the bake time,maybe 10 minutes.Thats it! Pull Steelhead trout from oven,plate it with veggies and top with spicy pineapple salsa serve with large cherry pepsi………………….Enjoy bon appetit..later dessert frozen blackberry yogurt.gotta go YOTES HOCKEY! big game tonight,must win….1st period 2 minutes left 1-1 …………………………. Spring is the air,ballgames all-over the valley of the sun and who what’s to cook.You can check-out my older post to find some AWESOME meals.So with that said.I have a couple of recipes that is so easy to make,these two recipes are better used towards the middle of summer,June/July but will still work now!all you will need is a 1 quart jar with lid with about 20 Peaches and 1 cup of sugar and 2 cups of water .Here we go! washed peaches,peel and pit peaches than place pits’ and skins’ into quart jar,next boil water and sugar to make a syrup and pour over pits’ and skins’ about 1 inch from the top and seal jar with lid so it’s a tight fit and place in a cool place,my suggestion is a cupboard towards the back.Thats It! Leave in cupboard for about 4-6 months,Just forgetaboutit! I would make multiply QUART JARS,maybe 8 to 10.Once the process is done you can drain the contents from jar and serve.Peach Brandy!Another way that works as well is get a 8 quart dutch-oven or crock pot and place washed peaches in bottom to layer,while adding sugar per layer-peaches/than sugar.You what to maybe layer it three times with peaches and sugar,taking it up to about 1 inch from the top.Cover with Saran wrap and place lid on top and put into cupboard for about 4-6 months.The only difference is that you’re using the whole peach and you would need to drain the contents and could use the peaches for toppings with ice cream!You can also use Plums’ or Strawberries’ The Philadelphia Dutch,use to bury their Quart jars deep under ground in the old days! am sure there are many people still doing it this way,but a cupboard is a lot easier to maintain!
